Our beans are vacuum sealed, and make for incredible deserts, brews, or any other occasion that calls for a taste of real vanilla. We also offer excellent vanilla pastes and extracts that can save you the time and headache of preparing your own.
Saffron
Saffron's aroma is often described by connoisseurs as reminiscent of metallic honey with grassy or hay-like notes, while its taste has also been noted as hay-like and sweet. Saffron also contributes a luminous yellow-orange colouring to foods. Saffron is widely used in Persian, Indian, European, and Arab cuisines. Confectioneries and liquors also often include saffron. Saffron is used in dishes ranging from the jewelled rice and khoresh of Iran, the Milanese risotto of Italy, the paella of Spain, the bouillabaisse of France, to the biryani with various meat accompaniments in South Asia. One of the most esteemed use for saffron is in the preparation of the Golden Ham, a precious dry-cured ham made with saffron from San Gimignano.
Black Garlic
Black garlic is a type of aged garlic whose browning is attributable to Maillard reaction rather than caramelization, first used as a food ingredient in Asian cuisine. It is made by heating whole bulbs of garlic over the course of several weeks, a process that results in black cloves. The taste is sweet and syrupy with hints of balsamic vinegar or tamarind. Black garlic's popularity has spread to the United States as it has become a sought-after ingredient used in high-end cuisine.

Fennel Pollen
Fennel pollen is hand collected from wild fennel which grows predominatly in Italy and now in California, thanks to Italian immigrants. Fennel pollen is a powerfully condensed spice with flavors of licorice, citrus and sweetness. Fennel pollen can be used in any dish you would add fennel seed or anise seed. It pairs well with grains, pastas, squash, pork, chicken and even icecream. This powerfull spice should be used sparingly, as a little goes a long way.
Dill Pollen
Dill pollen is a potent, crisp alternative to dill powder or seeds. Dill pollen keeps better than fresh dill, and has a better flavor than freeze-dried dill leaves. Dill is a great complement for fish, particularly salmon, eggs, potatoes, vegetables or sauces. Like many fresh herbs, dill pollen should be added near the end of the recipe in order to preserve its complex flavor and aroma.

Bush Dreams Rubs & Spices
Bush Dreams Rubs have been designed to give you the opportunity to use Native Australian ingredients with a simple application. Our chef’s favorite is Pepperberry Rub: A beautifully layered seasoning blended combining sweet paprika, garlic and onion with subtle citrus notes. The pepperberry provides a gentle heat and finishes with a smoky flavor. Can be used on all meats and is excellent when dusted on french fries. For a milder flavor, use before cooking.
